Ingredients
  • 2 eggs
  • 1 cup shredded chicken
  • 1 teaspoon lemon juice
  • 1/2 cup mayonnaise
  • Salt to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 6 slices sandwich bread
  • 3-4 lettuce leaves
  • 1 sliced tomato
  • 1 sliced cucumber
  • 2 slices cheese
  • 4 tablespoons butter
  • Toothpicks as required
Cooking Method
  1. Butter the bread slices and grill them until golden brown.
  2. Whisk the eggs and salt together in a bowl. Cook two omelet's in a pan.
  3. Combine the shredded chicken, salt, black pepper, white pepper, lemon juice, and mayonnaise in a bowl.
  4. Assemble the sandwich: Place a lettuce leaf on a bread slice, followed by the chicken mixture, cheese slice, omelet, cucumber, and tomato slice.
  5. Top with the remaining bread slice and secure with toothpicks.
  6. Cut the sandwich into four pieces and serve immediately with coleslaw.
