Ingredients
2eggs
1cupshredded chicken
1teaspoonlemon juice
1/2cupmayonnaise
Salt to taste
1/2teaspoonblack pepper
1/2teaspoonwhite pepper
6slicessandwich bread
3-4lettuce leaves
1sliced tomato
1sliced cucumber
2slicescheese
4tablespoonsbutter
Toothpicks as required
Cooking Method
Butter the bread slices and grill them until golden brown.
Whisk the eggs and salt together in a bowl. Cook two omelet's in a pan.
Combine the shredded chicken, salt, black pepper, white pepper, lemon juice, and mayonnaise in a bowl.
Assemble the sandwich: Place a lettuce leaf on a bread slice, followed by the chicken mixture, cheese slice, omelet, cucumber, and tomato slice.
Top with the remaining bread slice and secure with toothpicks.
Cut the sandwich into four pieces and serve immediately with coleslaw.
