Ingredients
  • ½ kg Mutton
  • 300 gm Rice
  • 4 – 5 Green chilies
  • 2 Onion
  • 4 cloves Garlic
  • 6 Star anise
  • 100 gm Plum
  • 2 tbsp Fennel seeds
  • 2 tbsp Coriander seeds
  • Mix whole spices as required
  • 1 tbsp Turmeric
  • 1 small packet Saffron
  • Salt to taste
  • ½ cup Ghee
  • Muslin cloth as required
  • 1-½ – 2 glass Water
Cooking Method
  1. Heat ghee in a pan over medium heat.
  2. Add chopped garlic and onion.
  3. Sauté for 2-3 minutes or until golden brown.
  4. Then add mutton, fry well for 5-10 minutes or until meat changed its color.
  5. Now make a spice bag with coriander seeds and fennel seeds.
  6. Add to the pan with turmeric, salt and mix whole spices as required.
  7. Cook well for 2 minutes.
  8. Now add 2 glasses of water, cover and cook for 3-40 minutes or until meat is tender.
  9. Add 300 gm soaked rice and 4 – 5 green chilies.
  10. Cook till rice starts coming on top. Lastly add 100 gm dry plums, 1 small packet of saffron and mix well.
  11. Simmer on low flame for 8 – 10 minutes or until done.
  12. Dish it out.
  13. Mutton Zafrani Pulao is ready to serve.

Serve hot with Raita and green Salad.
