Boil and Mash potatoes.

Add butter, Chinese salt, parsley, and Parmesan cheese.

Season with salt and pepper.

Mix well.

Shape them into croquettes.

In a small bowl, beat eggs.

Dip croquettes into beaten egg.

Then roll them into breadcrumbs.

Turn to coat evenly.

Heat oil in a pan over medium heat.

Fry croquettes for 5-6 minutes or until golden brown.

Remove from the oil and drain on paper towel.
