Ingredients
For the Ice Cream:
  • Vanilla ice cream
  • 200 grams evaporated milk
  • 50 grams fresh milk
  • 50 grams sugar
  • 50 grams condensed milk
  • 3 grams Bakehouse ice cream stabilizer powder
  • Vanilla bean paste to taste
  • 250 grams whipped cream
For the Swiss Roll:
  • 7 eggs
  • 90 grams sugar
  • 110 grams flour
  • 15 grams oil
  • 15 grams milk
  • Apple jam as required
  • Coconut as required
  • Neutral glaze as required
  • Cherries as required
Cooking Method
  1. Combine all the ice cream ingredients in a bowl and mix well. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

  2. Beat the eggs and sugar together until light and fluffy. Gradually add the flour, oil, and milk, folding in gently. Pour the batter into a 13x18 inch baking tray and bake at 160°C for 8-9 minutes.

  3. Once the Swiss roll is cool, spread it with apple jam and sprinkle with coconut. Roll up the Swiss roll and refrigerate.

  4. Cut the Swiss roll into round slices. Place a layer of Swiss roll slices in a round bowl lined with cling film. Add cherries to the gaps and fill with ice cream. Repeat with more layers of Swiss roll and ice cream.

  5. Freeze the cake for 6-8 hours. Remove from the freezer, remove the cling film, and glaze with neutral glaze. Enjoy!
