Ingredients
For the Kebab:
  • 500 gm Lamb mince
  • 1 minced Onion drained
  • 2 cloves minced Garlic
  • ½ finely chopped Red capsicum
  • 3 tbsp finely chopped Parsley
  • 2 tbsp Tomato purée
  • 1 tbsp Red chili flakes
  • ½ tsp Bicarbonate of soda
  • Sea salt flakes to taste
  • Ground black pepper to taste
For the Spinach Yoghurt:
  • 250 gm Spinach
  • 500 gm Yoghurt
  • 1 clove minced Garlic
  • 2 tbsp chopped Walnuts
  • 2 tsp Sumac
  • Olive oil for drizzling
  • Sea salt flakes to taste
  • Ground black pepper to taste
For Serving:
  • Tortilla wraps or bread 2-3
  • 1 sliced Onion
  • 2 tbsp Thick yoghurt
Cooking Method
  1. Preheat oven to 180 degrees C.
  2. In a large bowl, combine all kebab ingredients. Mix well with your hands until a smooth paste forms. Season with salt and pepper.
  3. Press the mixture into a shallow baking dish, covering the base. Cook for 18 minutes or until golden on top.
  4. For the spinach yoghurt, boil spinach in water for 2-3 minutes until wilted. Drain and cool in iced water. Finely chop and mix with yoghurt, garlic, walnuts, sumac, olive oil, salt, and pepper.
  5. Serve the tepsi kebab with tortilla wraps or bread, onion, parsley, yoghurt, and spinach yoghurt on the side.
