Ingredients
For Meatballs:
  • 300 gm Chicken mince
  • 4 Green onions chopped
  • 1/4 cup Coriander chopped
  • 1 tbsp Fish sauce
  • 1 tbsp Red curry paste
  • 1 cup Bread crumbs
  • 1 Egg
  • Salt & pepper to taste
For Peanut Sauce:
  • 1 tbsp Sesame oil
  • 1 tbsp Red curry paste
  • 1 cup Coconut milk
  • 2 tbsp Peanut butter
  • 1 tbsp Brown sugar
  • 1/4 tsp Red pepper flakes
  • Salt to taste
  • Rice to serve
Cooking Method
To Make The Meatballs:
  1. Preheat oven.
  2. Place paper over a baking sheet.
  3. In a medium bowl mix all the ingredients for the meatballs together well.
  4. Shape into small 1-inch meatballs.
  5. Place meatballs on the prepared baking sheet and bake for about 30 minutes or until golden on top and cooked from inside.
To Make The Peanut Sauce:
  1. Heat the oil in a sauce pan over medium heat.
  2. Add the red curry paste and cook for a couple minutes.
  3. Add the remaining ingredients, stir and cook for about 5 minutes.
  4. Add meatballs to sauce and toss so that the meatballs are fully coated.
  5. Dish it out.
  6. Garnish with coriander.
  7. Delicious Thai Chicken Meatballs with Peanut Sauce is ready too serve.
Serving Suggestions

Serve hot with rice.
