Finely chop tomato, ice berg, capsicum and carrot.
Place all chopped vegetables, pineapple and apple.
Season with salt and black pepper. Stir in the mayonnaise and lemon juice. Mix until well combined.
Now cut boiled potatoes into halves.
Remove pulp from centre of each slice. Make cavity in each piece.
Stuff potato with prepared vegetable mixture. Now top with grated cheese, and bake in the preheated oven on 200 degrees for 3 β 4 minutes.
Remove from oven and serve !
