Ingredients

2tbspGinger garlic paste
½bunch Coriander leaveschopped
2tbspPapaya paste
250gm Yogurtthick
1tspAll spice powder
1tspCumin powder
1tspChaat masala
1tspDry mango powder
1tspCumin seedscrushed
1tspTurmeric
1tspCrushed red pepper
1tspChili powder
Salt to taste
Oil for fryingoptional
Muslin cloth as requiredoptional

Cooking Method
Marinate the mutton with a little salt, raw papaya paste, and vinegar. Keep aside for 20-25 minutes.
In a bowl, mix together thick yogurt, all spice powder, cumin powder, chaat masala powder, dry mango powder, crushed cumin seeds, turmeric powder, crushed red pepper, chili powder, chopped coriander leaves, ginger garlic paste, and salt to taste. Mix well.
Lightly fry the marinated mutton pieces in oil until browned (optional).
Coat the fried (or marinated) mutton pieces generously with the yogurt mixture. Optionally, wrap each piece in muslin cloth.
Put the coated mutton in a steamer and cook for 20-25 minutes.
