Boil the noodles with 2 tbsp oil for 3-4 mins. Drain them and let it cool.
Place boneless chicken in a chopper or food processor. Add, egg, white pepper, green chilies, bread crumbs, baking powder, green onion and some salt in it.
Process until well combined. Take it out and make small balls from it. Boil them for 4-5 minutes . chicken balls are ready.
Heat some oil in the pan, Saute chopped garlic and onion in it for few seconds.
Then add carrots, green chilies, green beans and onion and stir fry 4 to 5 minutes.
Add in chicken balls , add in rice noodles and toss to coat evenly. Stir in the lemon juice, Oyster sauce, vinegar, soy sauce, chinese salt and pepper.
Take it out in a dish. Garnish it with ½ cup peanuts and green coriander. Puck Thai is ready to serve !
