  • 3 Potatoes boiled and mashed
  • 1 Carrots chopped and boiled
  • ½ cup Peas boiled and mashed
  • 1 cup Cabbage finely chopped
  • 1 tsp Ginger garlic paste
  • 4 tbsp Onion chopped
  • Salt to taste
  • ½ tsp Black pepper
  • ½ tsp Crushed red pepper
  • ½ tsp Chat masala
  • 1 tbsp Lemon juice
  • 10 Curry leaves finely chopped
  • 4 tbsp Coriander leaves finely chopped
  • 3 Green chilies finely chopped
  • 2 tbsp Oil
  • 2 Eggs
  • Bread crumbs as required
Cooking Method
  1. Heat oil in a pan over medium heat.
  2. Add chopped onion and saute until soft add curry leaves with all the boiled and chopped vegetables, salt, black pepper, crushed red pepper, chat masala and lemon juice.
  3. Mix until well combined.
  4. Remove from the flame and let it cool.
  5. Spread mixture on a flat surface.
  6. Cut with any shape cutter.
  7. Dip in eggs then roll in bread crumbs.
  8. Shallow fry until golden brown.
  9. Remove from the oil and drain on kitchen paper.
  10. Vegetable Nuggets are ready to serve.
Serving Suggestions

Serve with Red Sauce Chutney.
