Do try this Bihari Kabab Recipe by Abida Baloch, made with thinly sliced fillets of meat, preferably beef that is tenderized using raw papaya and finished off with coal smoke method called dhuni.

Ingredients
  • 500 gm Beef strips flattened
  • 1/4 cup Mustard oil
  • 1 Onion fried & grinded
  • 2 Green cardamom
  • 2 Bay leaves
  • 1 tsp Coriander seeds
  • 1 tsp White cumin
  • 1 tsp Poppy seeds
  • 4-5 Red chilies
  • 1/4 tsp Mace powder
  • 1/4 tsp Nutmeg powder
  • 1 tsp Salt
  • 1 tsp Red chili powder
  • 1 tsp Paprika powder
  • 1 tsp All spice powder
  • 1 tbsp Papaya paste
  • 1/4 cup Yogurt
  • 1 tbsp Ginger garlic paste
Cooking Method
  1. Heat a pan over medium heat.
  2. Add green cardamom, bay leaves, poppy seeds, coriander seeds, white cumin, black cumin and red button chilies.
  3. Roast these for 1-2 mins and Grind till they turn into a powder.
  4. In this powder, further add all the remaining Ingredients.
  5. Pour this mixture over the beef strips.
  6. Drizzle some mustard oil.
  7. Mix well and leave to marinate for 2-4 hours.
  8. Take a metal or wooden skewer.
  9. Take a strip of beef and start threading it into your skewer.
  10. Barbecue these kababs on a grill or pan-frying in a pan.
  11. Garnish with fresh coriander, lemon wedges and onion slices.
  12. Bihari Kabab is ready to serve.
  13. Serve hot with Naan and salad.
