  • 1 packet Lasagna sheets boiled
  • 1/4 cup Oil
  • 1 cup onion chopped
  • 1 tbsp minced garlic
  • 1 tbsp red pepper flakes crushed
  • 2 cup Mix vegetables
  • 1 cup tomatoes chopped
  • handful Fresh basil leaves chopped
  • 1 cup Mozzarellas cheese
  • 1 cup Cheddar cheese
  • 2 Eggs
  • Salt to taste
  • black pepper to taste
Cooking Method
  1. Preheat oven.
  2. Heat the oil in a pan.
  3. Add onion and cook, stirring occasionally until translucent.
  4. Add the garlic, red pepper flakes, vegetables, salt paper then cook, until softened but still with some crunch.
  5. Stir in crushed tomatoes cook until the liquid has thickened and reduced by half.
  6. Sprinkle the basil and set aside.
To Make the Cheese Filling:
  1. Stir the both cheese, eggs, and a 1/2 teaspoon of salt in a medium bowl until well blended.
To Assemble the Lasagna:
  1. Spoon just enough vegetable mixture into the baking dish to lightly cover the bottom.
  2. Arrange sheets lengthwise and side by side to cover the bottom.
  3. Spread Top with vegetable mixture and repeat with remaining cheese and vegetables.
  4. Finish with cheese, bake for 10 minutes, or until cheese is crusty around the edges.
  5. Vegetable Lasagna is ready to serve.
  6. Serve hot.
