For Dough:
  • 1 cup flour
  • Water to knead as required
  • 1/4 tsp salt
For Filling:
  • 3 eggs
  • 2 onions finely chopped
  • 6 green chilies finely chopped
  • 3 tbsp vegetable oil
  • 1 tbsp fresh coriander leaves
  • 1/2 tsp salt
  • 1/4 tsp turmeric powder
  • Oil for deep frying
Cooking Method
To Make Samosa Filling:
  1. Heat 3 tbsp oil in a pan.
  2. Put onion in hot oil and cook for 5 minutes.
  3. Then add green chilies, eggs, salt and turmeric powder.
  4. Stir fry for 2 minutes or until well done.
  5. Remove from the flame.
  6. Sprinkle coriander leaves over it.
  7. Let it cool completely.
To make Samosa Dough:
  1. Place flour with salt in a bowl.
  2. Knead a soft dough with water.
  3. Cover with a wet cloth and leave it for 30 minutes.
To Make Warqi Samosa:
  1. After 30 minutes, make 10 small balls from the dough.
  2. Roll 5 balls into a saucer size.
  3. Spread melted ghee on each samosa sheet.
  4. Cover with another go on doing till all 5 have been put on top of each other.
  5. Cover with a wet cloth and leave it for 30 minutes.
  6. After 30 minutes roll out by sprinkling very little flour to a big round size of a dinner plate.
  7. Cut in four portions.
  8. Apply little water beside the edges of each portion.
  9. Put 1 tbsp filling mixture in between and press down near the filling.
  10. Do not press the edges.
  11. Repeat this procedure with all remaining ingredients.
  12. Heat oil in a deep wok over medium high heat.
  13. Deep fry the samosa on low flame for 5 minutes or until light golden. Remove from the oil and drain on paper towel.
  14. Warqi Samosa is ready to serve. ENJOY!!
