A slight different recipe to the traditional niharis that you all have out there. This Kofta Nihari Recipe by Chef Zakir is another infusion dish which adds the deliciousness of Meat balls to your Nihari delight. Two separates dish are so beautifully infused to make a new great taste. Give it a try, you'll love it. Serve with warm naans, garnished green chilies and garnished fried onions.

Ingredients
  • 500 gm Mutton bones
  • 2 tbsp Ginger garlic paste
  • 3 Onion
  • ¼ cup Wheat flour
  • 2 tbsp Fennel seeds
  • 2 tbsp Dry ginger powder
  • 3 – 4 Cloves
  • 3 – 4 Cardamom
  • 1 tbsp All spice powder
  • 1-½ tbsp Chili powder
  • Salt to taste
  • 1 cup Ghee
  • Muslin cloth as required
Ingredients for Kofta:
  • ½ kg mince
  • 1 Onion
  • 2 – 3 Green chilies
  • 1 piece Ginger
  • 3 – 4 cloves Garlic
  • ¼ bunch Coriander leaves
  • 2 tbsp Roasted grams
  • 1 tsp All spice powder
  • 1 tsp Chili powder
  • Salt to taste
Cooking Method
  1. Make a spice bag with a muslin cloth, fill with 2 tbsp fennel seeds and 2 tbsp dry ginger.
  2. Finely slice 3 onions and keep aside.
  3. In a pan, add 1 cup ghee, sliced onion and ½ kg mutton bones.
  4. Cook and stir well on low flame until golden brown.
  5. Mash the fried onion very well.
  6. Now add ¼ cup water and 2 tbsp ginger garlic paste.
  7. Also add 3 – 4 cloves, 3 – 4 cardamoms and 1 ½ tbsp chili powder.
  8. Cover and cook till water dries.
  9. Now add 1 glass of water and salt to taste.
  10. Cover and cook for a 25 minutes.
  11. Meanwhile, In chopper, put together mince, 1 onion, 3 green chilies, piece of ginger, 4 cloves of garlic, coriander leaves, 2 tbsp roasted grams, 1 tsp all spice powder, 1 tsp chili powder and salt.
  12. Process until well combined.
  13. Take it out mince mixture in a bowl.

  15. Now remove lid of the pan, add mince balls to the pan and ½ cup water and 1 tsp all spice powder.
  16. Cover and cook for 20 minutes.
  17. Now remove lid, dissolve ¼ cup of roasted wheat flour into a little water.
  18. Pour into the pan and cook on low flame for few minutes or until gravy thickened.
  19. Then turn the flame off.
  20. Cover and keep aside.
  21. Remove mutton bones and discard.
  22. Take it out in serving dish.
  23. Delicious Kofta Nihari is ready to serve.

Serve hot with naan.
