Ingredients
- 300 gm Rice
- 3 tbsp Oil
- 4-5 cloves Garlic crushed
- 1 medium piece Ginger chopped
- 2 tbsp Sesame seeds
- 1 tsp Lemon skin
- 1 Bottle gourd
- 1 Carrot
- 1 Green Capsicum
- 1 Red capsicum
- 2 Spring onion chopped
- 2 Chicken breast julienne
- 2 tbsp Soya sauce
- 2 tbsp Worchester sauce
- ¼ bunch Coriander& mint leaves
- 2 Eggs
- few drops Red food color
- few drops Green food color
- Salt to taste
- ½ tsp Black pepper powder
Cooking Method

Boil rice and keep aside.

Cut all the vegetables (bottle gourd, carrot, green capsicum, red capsicum, spring onion) and 2 chicken breasts into juliennes.

Blanch sliced bottle gourd for a few minutes and keep aside.

Beat 2 eggs separately, add a few drops of red color in egg and a few drops of green color in other.

Now shallow fry both the eggs separately.

Heat oil in a wok, add in chopped garlic, chopped ginger, lemon skin and chicken. Cook for 4-5 minutes or until chicken is no longer pink.

Then add in boiled rice and all the sliced vegetables.

Season with salt, black pepper, soy sauce, Worchester sauce, coriander and mint leaves. Mix very well.

Cut fried egg into strips and add to the boiled rice. Stir well. Take it out in a serving dish.

Delicious Rainbow Fried Rice is ready to serve.
