This Special Claypot Chicken Recipe by Chef Zakir demonstrates the special technique to bake a special stuffed chicken around the claypot crust. A super tasty and unique recipe. Do try it!
- 1 whole Chicken with skin
- 375 gm Chicken mince
- 1 Onion
- 1 Egg
- 2 Tomatoes chopped
- half Capsicum
- 1/2 cup Boiled peas
- 1/4 bunch Parsley chopped
- 1/4 bunch Coriander leaves chopped
- 50 gm Raisin
- 8 – 10 Green olives chopped
- Salt to taste
- 1/2 tsp Black pepper powder
- 2 tbsp Papaya paste
- 2 tbsp Lemon juice
- 1 tbsp Chili powder
- 1 tbsp Crushed red pepper
- 1 tbsp Turmeric
- 2 tbsp Ginger garlic paste
- 1 tbsp Cumin seeds ground
- 3 tbsp Oil
- 1 kg Clay soil
- 750 gm Flour
- 3 Egg
- Butter paper as required

Mix together clay soil, 750 gm flour and 3 eggs. Knead to dough with water as required.

In a chopper, add chicken mince, onion, coriander leaves, parsley, salt, black pepper and process to combine well.

Take it out in a bowl. Add boiled peas, chopped capsicum, chopped tomatoes, salt to taste, black pepper powder, coriander leaves, green olives, raisins and parsley. Mix well and keep the stuffing mixture aside.

Debone a whole chicken from its back, don’t cut any piece, chicken should be remain whole.

Marinate chicken with ginger garlic paste, lemon juice, papaya paste, chili powder, crushed red pepper, turmeric, ground cumin seeds, salt to taste and a little oil.

Marinate inside and outside very well with the marinade ingredients.

Now stuff chicken with mince vegetable mixture. Roll thread onto the chicken.

Wrap chicken in butter paper, now make a layer of clay dough onto chicken, cover the chicken very well so that no part is left uncovered.

Now bake in the preheated oven on 150 degrees for 40 minutes. Remove chicken from the oven, break the clay crust. Remove butter paper and tread. Serve whole chicken or cut into pieces.
