A tasty and interesting Basant Biryani Recipe By Chef Zakir. The color looks appetizing and the taste is great! It's delicious served with mint chutney or simple, plain yogurt.

Ingredients
  • 300 gm Rice soaked
  • Whole spice as required
  • 1/2 cup Ghee
  • 1/2 tsp Turmeric Powder
  • 1 tsp Chili powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 250 gm Plain Yogurt
  • 1/4 bunch Coriander leaves
  • 1/4 bunch Mint leaves
  • 3 Tomatoes sliced
  • 50 gm Dried Plum Aloo Bukhara
  • 2 Lemon sliced
  • 1/4 tsp Yellow color
  • 2 tbsp Kewra
  • Salt to taste
  • 1 cup Green Peas
  • 1 Carrot chopped
  • 250 gm Kidney beans
  • 1 Capsicum chopped
  • 1 Red capsicum chopped
  • 2 Potatoes
  • 2 tbsp Ginger garlic paste
  • 1/2 cup water
Cooking Method
  1. Finely chop carrot, green beans, green capsicum, red capsicum and potatoes.
  2. Now heat 1/4 cup ghee in a deep pot over medium heat.
  3. Add ginger garlic paste, whole spices, peas and all the chopped vegetables.
  4. Fry for 1 – 2 minutes.
  5. Now add yogurt, cumin powder, turmeric, coriander powder and red chili powder.
  6. Cook and stir for 1-2 minutes.
  7. Now cover with a lid and let it simmer for 8-10 minutes.
  8. Coarsely chop 3 tomatoes and cut 2 lemons into thin round slices.
  9. Also chop coriander and mint leaves.
  10. Turn the flame off.
  11. Add in chopped coriander, chopped mint leaves, sliced lemon, chopped tomatoes and 50 gm dries plum.
  12. Now boil water with a little salt in a separate pot.
  13. Add soaked rice.
  14. Cook till it comes to a boil.
  15. Remove a little rice and spread on top of vegetable mixture.
  16. Then cook rice till a little tender.
  17. Now strain all the rice and spread on top of vegetable mixture.
  18. Mix ¼ tsp yellow color in 2 tbsp kewra.
  19. Sprinkle on top of rice.
  20. Now spread remaining ghee on top.
  21. Cover and simmer for 10 –12 minutes or until well done.
  22. Take it out in a serving dish.
  23. Delicious Basant Biryani is ready to serve.

Serve with Raita.
