Ingredients
  • ¼ cup Soya sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Brown sugar
  • 2 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 3 tbsp Oil
  • ½ kg Chicken breast fillets cubed
  • Salt to taste
  • 1 tbsp Chopped garlic
  • 1 tbsp Chopped ginger
  • 1 Capsicum chopped
  • 1/4 cup Chicken broth
  • 2 tbsp Corn flour
  • 1 cup Cashews
  • 2 Green onions thinly sliced
  • Rice or noodles to serve
Cooking Method
  1. In a bowl, mix together the soya sauce, vinegar, brown sugar, oyster sauce, and sesame oil.
  2. Set aside.
  3. Heat the oil and add the chicken cubes.
  4. Season with salt and cook chicken for 5-6 minutes or until chicken is browned.
  5. Add in the garlic and ginger and stir fry for few minutes.
  6. Then add the capsicum.
  7. Pout the chicken broth and sauce mixture and let it simmer for 2-3 minutes.
  8. Then mix the corn flour with 1/4 cup water to make a slurry.
  9. Pour in the chicken and keep stirring, cook for 4-5 minutes or until sauce is thickened.
  10. Add cashew Nuts and stir to coat evenly.
  11. Add a splash of water if the sauce is too thick.
  12. Sprinkle green onions over it.
  13. Cashew Chicken is ready to serve.
Serving Suggestions

Serve with cooked rice or noodles.
