This Lauki Raita Recipe By Zarnak Sidhwa, is a delicious variation to the usual raita made of cucumber.  This refreshing raita can be served as a side dish. It not only saves time but is also very easy to make with basic ingredients available at home. Give it a try!

Ingredients
  • 250 gm Bottle gourd grated
  • 1 cup Yogurt
  • 1 tsp Sugar
  • ½ tsp Red chili powder
  • Salt to taste
  • ¼ cup Green coriander chopped
  • 1 tsp Cumin seeds roasted ground
Cooking Method
  1. Heat 2 cups of water to boiling in a deep pan or pot.
  2. Add the grated bottle gourd to this boiling water.
  3. Stir well and cook for 1 minute then strain.
  4. Allow the bottle gourd to cool.
  5. When it completely cool.
  6. Press down in the colander to squeeze out all excess liquid.
  7. Put the yogurt, sugar, red chili powder, salt and coriander in a mixing bowl.
  8. Blend till smooth.
  9. Now add the cooled bottle gourd, cumin powder and stir to blend.
  10. Chill in the refrigerator.
  11. Lauki Raita is ready to serve.
Serving Suggestions

Serve with Paratha, Daal or any curry.
